Milk texture lives in a narrow band. From fridge (~4 °C) to about 55–65 °C you get sweetness and stretch; much hotter and proteins tighten, sugars dull, and latte art foam goes stiff. This is rise math plus a yes/no if the target is over a typical protein comfort line.

Rise is target minus start. 4 °C to 60 °C is a 56 °C climb — that is the energy the wand must put into the pitcher. Over-protein flags when the target sits at or above about 70 °C, where dairy typically tastes cooked. Alternative milks often want a lower target; the flag is a dairy heuristic.

Stop early
Carry-over heat in a hot pitcher keeps climbing after you cut steam. Kill the wand a couple of degrees under target.
Frequently asked questions
Why not 70 °C for ‘hot drinks’?
Customers who want scalding milk are asking for less sweetness. Serve 60–65 °C unless they insist, then warn.
Should I start with warmer milk?
You get less time to stretch. Cold milk is the usual canvas. The rise just gets smaller if you start at 15 °C.
Cappuccino vs latte?
